I am having a Summer Luau Party any ideas for the menu?
I am having a Luau but, cooking the food myself. Any suggestions on what food to serve that has a tropical Flair.
LUAU PORK ROAST
1 (3-5 lb.) pork center loin roast
4-5 cloves garlic, halved
1/2 c. dry white wine
1/2 c. soy sauce
1/2 c. finely chopped onion
1/4 c. vinegar or lemon juice
2 tbsp. brown sugar
1 tbsp. dry mustard
1 tbsp. grated ginger root or 1 tsp. ground ginger
Luau sweet potatoes
Hot cooked rice
Have butcher loosen back bone of meat. Insert tip of knife into meat at even intervals and push garlic halves into meat as you remove knife. For marinade combine wine, soy sauce, onion, vinegar, brown sugar, dry mustard, and ginger root. Place meat in a plastic bag; set in a baking dish. Pour marinade over meat; close bag. Marinate in refrigerator 10 hours or overnight, turning often.
Remove roast, reserving marinade. Pat dry with paper towels. Place rib side down in shallow roaster; insert meat thermometer. Roast uncovered at 325 degrees for 2 1/2 to 3 hours, until thermometer registers 170 degrees. Brush frequently with marinade during the last 30 minutes.
Combine 1/2 cup marinade with 1/4 cup water. Bring to boiling, reduce heat and keep warm. Arrange roast and luau sweet potatoes on platter. Serve with rice and heated marinade. Makes 6-8 servings.
PALUSAMI-SAMPAR, LUAU (VEGETABLES -
STEAMED)
5 pkgs. Luau or taro leaves
3 cans coconut milk
1 sm. onion
1 clove garlic
Salt to taste
Wash taro leaves and form 5 leaves in the palm of your hands (like a bowl). Pour 1/2 cup coconut milk with onion, garlic, and salt. Shape into a ball. Placing into foil paper, fold and twist top of foil. Place in 300 degree oven for 1 hour; turn to 200 degrees and let stand until ready to serve. Serve warm with bread fruit.
HAWAIIAN LUAU CAKE
3 c. flour
2 c. sugar
1 tsp. salt
1 tsp. soda
1 tsp. cinnamon
1 1/2 c. oil
3 eggs, beaten
1 (8 oz.) can crushed pineapple, drained
1 1/2 tsp. vanilla
1 c. chopped nuts
2 c. diced bananas
Sift dry ingredients; add remaining until blended. Bake in greased tube pan, 350 degrees for 1 hour, 20 minutes. Place foil over top for last 15 to 20 minutes to prevent cracking.

oh wow..i love such parties!
BBQ is a must! u can BBQ pineallples as well…
rice dishes..flavour the rice with butter and spices and add meat &/or vegetables in it..
stuffed mushrooms…carve out the inside of the mushrooms and stuff it with cheese corn..its scrumptious!
u can also boil corn grains and add butter, salt, pepper and a pinch of chilli powder to this to add a twang to the taste..
also, roast a full corn and add lime and salt to it and serve this to your guests..
open sandwiches r good..toppings can include salami, cheese spreads, mushrooms, tomato, etc..
hot dogs and burgers r contemporary but welcome none-the-less..
u wont have to serve too much time wondering how and when to serve waht.u can enjoy the party and allow the guests to serve themselves as well offering a vriety of choices..
for drinks, beer, fruit punch, fruit juices, or mocktails if u can get hold of easy concotions..
desserts u can include mousse, fruit pudding, cake, icecream etc..
have a blast at your party!

I have had a Summer Luau Party. We decided to make life easy for ourselves and did Hawaiian Hamburgers.
Grilled some patties, pineapple pieces, bacon and onion on the BBQ and offered other toppings such as lettuce, cheese, beetroot, tomato etc.
Everyone stacked their own burgers and only required a plate as no cutlery needed and was a great casual gathering.
It was SOOOOOOO simple and easy, hardly any preparation time, and something a little different. Enjoy.

Seven-Fruit Salad
• 1/2 cup lime juice
• 1 pint blueberries
• 1/2 cup water
• 1 pint fresh strawberries, sliced
• 1/2 cup sugar
• 1 1/2 cups watermelon balls
• 2 medium nectarines, thinly sliced
• 1 cup green grapes
• 1 large banana, thinly sliced
• 1 kiwifruit, peeled and chopped
In a bowl, combine the lime juice, water and sugar; stir until sugar is dissolved. Add nectarines and banana; toss to coat. In a 2-1/2 qt. glass bowl, combine the remaining fruits. Add nectarine mixture; stir gently. Cover and refrigerate for 1 hour.

Make it lite.A salad bar with a variety of items.Then do a tray with fruit Kabobs.You can use pretzel sicks if small children will be eating.Do cheese snack try.Put out some diced dry salami,ham,and cheese for the salad,in case someone is hungry.Keep it easy and you can have everything in the fridge days before.If not wanting the kabobs,do a large fruit bowl.Put it in a nice glass bowl to show the colors for the fruit.Sandwiches and dips are good with chips on the side.have fun so do as much as possible ahead of time.The desserts can be cookies,cupcakes,or brownies….
