We did this once, because I can't stomach poi. But since it's so traditional I tried to think of ideas to recreate it. Wheat I ended up doing was using lemon yogurt, food coloring, and coconut flavoring. It takes a minutes to get the color right without it tasting funny. We served with fresh fruit.

for one, you could hire someone to teach everyone to hula dance at the party. you could serve pineapple pizza. also pina colodas, and smoothies. ooh, how about that night you could have a bonfire, where you stuck a bunch of marshmallows on a stick and rotated it. everyone wears a grass skirt and lei.

Definetly hula skirts and coconut tops, but you already probably thought of that. You could try to get a hula CD for people to dance to. I’ve also heard of people buying a pig to serve because that’s what they do at luaus. Blow up palm trees and leis are a must.
